Each character gets a talisman that allows them to rewrite reality. Once per campaign, they can use it to set the rules to whatever edition they desire.
Take it even further and let them switch to a different TTRPG. Got a heist coming up? Welcome to Fiasco. Someone died and needs to reroll a character? Well, characters are a lot easier to make in Fate Accelerated Edition.
